Coffee rules

Timing

Specialty bars open 08:00-09:00 and many stop serving by 17:00-18:00. Kissaten run later but close their kitchens early.

Cash

Older kissaten are cash only. Carry ¥2,000 in small notes; the counter will not love your card.

Manners

No phone calls, no laptop sprawl at a two-seat counter, and do not photograph baristas or other guests without asking.

Beans

Buy 200g bags, not 1kg — Japanese roasters date-stamp for peak within two weeks and would rather you came back.
